Gluten Free Eggplant Parm

We can't get enough of this simple, yet incredible eggplant parm preparation. A light, baked version, eggplant is stacked with gluten-free panko breadcrumbs and fresh mozzarella, and served with our housemade tomato-basil sauce. Another hit with little diners as well!
